A process for preparation of alcohol beers from starch-containing feedstock provides for preparation of batch by means of mixing of grinded corn starch-containing feedstock with water together with exhaustive enzymes, the cooking of feedstock is realized in one stage at the temperature of 80-88 °С, but a saccharification and subsequent exhaustion of starch – at the temperature of 50-55 °С, than the mash is sterilized with simultaneous activation of enzymes by ultrasonic oscillation. During saccharification of exhausted mass the enzymes of proteolytic and cellulose action are used.Due to a realization of the process, the alcohol yield per unit of feedstock is increased, the period of exhaustion of starch-containing feedstock and fermentation process are reduced, the energy demands and water flow are reduced. |
