A method for breeding varieties of winter triticale with improved technological indices of the grain quality includes achieving the balanced state of a gluten complex, formed of a totality of lines from a hybrid population, selected in different agroclimatic conditions, which is composite according to the type of the development and level of quality. To improve technological properties thereof, interaction of the gluten and dough which are contrast according to quality thereof, with high proteolitic and low amilolytic activities of the components of a synthetic variety is used. |
