PROBLEM TO BE SOLVED: To provide a fryer for preventing a user from getting burned by right and left flange parts and a side panel part of an oil tank which has a high temperature when high temperature air stays in a part between lower sides of the right and left flange parts and the side panel part of the oil tank. SOLUTION: The fryer includes: a container body 1 in which a main body includes a front panel part 11, a back panel part 12, and right and left side panel parts 13 and flange parts 21 of an oil tank 2 are attached to an upper end part; a combustion chamber 3 provided with a burner 30 disposed at a front part in the container body 1; a heat exchanger 4 in which a high temperature combustion flue gas G1 generated in the combustion chamber 30 flows inside to exchange heat with frying oil in the oil tank 2; an exhaust cylinder 5 for exhausting the combustion flue gas G1 flowing in the heat exchanger 4 outside the container body 1; and a back guard 14 that rises upward between a rear end part and the back panel part 12 of the oil tank 2 of which an internal space communicates with the inside of the container body 1 and through which the exhaust cylinder 5 goes. Upper end parts of the flange parts 21 on both sides and of the side panel parts 13 of the oil tank 2 are tilted such that the more backward they go, the higher they become.
