The foodstuff slicer is cleaned by a fluid hotter than the machine working temperature. During cleaning and for a short period after the cleaning action, before the machine is used again, at least the pipe carrying the cleaning fluid and the machine interior are flushed with air to clean them and remove any moisture. Ambient air is drawn in by suction, dehumidified to 10-20% relative moisture content and at a temperature of 3-20[deg] C and spread through all the machine parts with an overpressure.
