<P>PROBLEM TO BE SOLVED: To provide a packaged double-layer jelly having a beautiful gradation structure with an anthocyanin pigment at the interface of an upper layer gel and a lower layer gel, and a method for stably producing the packaged double-layer jelly by a simple procedure. <P>SOLUTION: The packaged double-layer jelly having a gradation structure includes a gel containing an anthocyanin pigment and a gel free from anthocyanin pigment, wherein both gels have nearly the same pH values. The method for producing the packaged double-layer jelly having a gradation structure comprises adding an anthocyanin pigment in either the first jelly liquid or the second jelly liquid, filling the first jelly liquid in a jelly vessel and gelatinizing to obtain the first gel, filling the second jelly liquid and gelatinizing the liquid, and leaving the vessel at rest to migrate the anthocyanin pigment. <P>COPYRIGHT: (C)2010,JPO&INPIT |
