PURPOSE: A red ginseng fermented with Lactobacillus fermentum NUC-C1 KCCM10929P and a production method thereof are provided to enable saponin glucoside to be directly absorbed into a human body. CONSTITUTION: A method for producing a red ginseng fermented with Lactobacillus fermentum NUC-C1 KCCM10929P comprises: a first step of heating ginseng in water; a second step of adding purified water to the heated ginseng, and aging them; and a third step of adding Lactobacillus fermentum NUC-C1 KCCM10929P to the prepared red ginseng extract or red ginseng body, and fermenting them.
