PURPOSE: A method for manufacturing herb Makgeolli (Korean rice wine) is provided to increase preference of consumers and enhance consumers' health and farm income. CONSTITUTION: A method for manufacturing herb Makgeolli (Korean rice wine) comprises: a step of adding 300g of dried herb in 10 L of water and boiling for four hours to extract herb extract; a step of filtering the herb extract; a step of streaming rice and adding 200g of rice, 5ml of culture yeast, and 280 ml of herb extract; a step of mixing 3.3 kg of boiled rice, 9g seed malt, and 5.4 L of herb extract; a step of fermenting the mixture for 24 to 60 hours; a step of mixing 6.5 kg of rice and 10.4 L of water; a step of fermenting for 48 hours; and a step of adding 38 L of water and adjusting the liquor to have 5% of alcohol content, 4.5-4.8 °Brix of sugar content, and 3.7-3.8 of pH concentration. |
