Methods of tanning hides or skins are disclosed, the methods comprising a fruit tanning step of contacting, for a predetermined time and at a predetermined temperature, a hide or skin with a tanning liquor comprising a fruit tanning extract. The preferred fruit is of the family Maloideae, preferably apple. Also disclosed are leathers obtainable by the methods, products comprising the leathers and methods for producing fruit tanning extracts.
