PRODUCTION OF SEDUM EXTRACT ADDING JELLY AND ASSESSMENT OF ITS PHYSICOCHEMICAL PROPERTIES

PURPOSE: A method for preparing gelatin jelly containing a sedum juice is provided to maintain the helpful components of sedum in order to improve functionality as well as consumer preference. CONSTITUTION: A method for preparing gelatin jelly containing a sedum juice comprises the following steps of: pulverizing washed sedum to obtain a sedum juice; preparing 100ml distilled water, 12.5g sugar, 3.5g gelatin, 0.2g citric acid, and 0.05g tartaric acid; mixing all those ingredients and heating for 4 minutes; cooling off to room temperature; adding 2%(v/v) sedum juice to the mixture and pouring them into a mold; and cooling the mixture at the temperature of -70°C for 0.5 hour.
