FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing canned compotes. Method provides for recipe components preparation, cutting, drying in microwave field at preset process parametres, chicory frying, milling and extraction by drinking water at preset process parametres. After that obtained extract is filtered, syrup is prepared based on it, grapes and syrup are packed, sealed and sterilised. ^ EFFECT: method allows to produce compote with coffee flavour and aroma tones with no coffee content, simplification of technology and reduced content of boiled berries in end product without reduce of product's storage time. |
