PURPOSE: A method for preparing fermented foods using leaf mould is provided to ferment wholesome natural plants to improve the quality of the obtained fermented foods. CONSTITUTION: A method for preparing fermented foods using leaf mould comprises the following steps of: mixing one or more sorts of soil selected from the group consisting of bamboo leaf mould, pine leaf mould, broad-leaved tree leaf mould, foreshore microorganism aged soil, swamp microorganism aged soil, and their mixture; preparing one or more ingredients selected from the group consisting of steamed chestnut, boiled bean, hard-boiled glutinous rice, and their mixture, and adding the ingredients to the soil; adding leaf mould ashes, rice hull ashes, or their mixture to the mixture; adding sugar and salt to the mixture and aging them; adding water to the aged mixture and boiling them; filtering the boiled mixture and obtaining an undiluted fermented liquid; and using the fermented liquid as a base liquid of various kinds of fermented products.
