CONVERSION OF STILBENOIDS

A target stilbenoid having the general formula (1) wherein each R group is -H or -OH provided that at least one -OH R group is produced by supplying to or producing in a micro-organism a substrate stilbenoid in which at least one of R group is -H and producing in said micro-organism an enzyme capable of hydroxylating said substrate stilbenoid to produce therefrom a said target stilbenoid having one or more -OH R groups more that the substrate stilbenoid.
