摘要 A method for preparing reformed meat using beef and pork is provided to improve preference and taste while removing crumbling and fishy taste by kneading minced beef and pork and molding the mixture. A method for preparing reformed meat using beef and pork comprises the following steps of: mincing beef and pork; crushing cartilages of beef and pork; mixing the crushed cartilages of beef and pork and mined beef and pork with seasonings and kneading the mixture; and molding the mixture in a predetermined shape. The crushed cartilages of beef and pork have 0.5-2.5mm in particle size. The 5-20 wt% of crushed cartilages of beef and pork are added to the mined beef and pork on a basis of the mined beef and pork.
