摘要 PROBLEM TO BE SOLVED: To provide a method for enzymatic saccharification of cereal grains by which starch-based cereal grains are efficiently saccharified at low temperature with saving energy. SOLUTION: A raw material of starch-based cereal grains is kneaded and extruded under compression by an extruder 1 to puff the raw material 2. The water content of the raw material 2 of the starch-based cereal grains at the time of feeding is brought to be 20% and the water content after puffing is brought to be 10%. The material is treated at a 190°C treatment temperature for≤30 seconds to puff and gelatinize the material. A puffed material 4 is pulverized to be a pulverized product 5 and about 0.4% glucoamylase 6 is solely added to the pulverized product 5 to saccharify the material to be a saccharified product 7.
