<P>PROBLEM TO BE SOLVED: To provide a pre-cooling method capable of easily setting a water-absorbing foam sheet in which water has been absorbed, inside a container, reliably evaporating water during vacuum pre-cooling and cooling agricultural products in a short time, and efficiently performing the vacuum pre-cooling of the agricultural products. Ž<P>SOLUTION: When the agricultural products are stored in a heat insulating container A1 including a container body 10 and a lid body 20, and pre-cooled and packaged, a plate-shaped, water-absorbing foam sheet 30 in which an open cell foam layer 31 and an closed cell foam layer 32 are laminated and a large number of small holes 33 communicating with the open cell foam layer 31 are formed from the surface of the closed cell foam layer 32 is stored within the container while water is absorbed in the open cell foam layer 31.
