PURPOSE: A method for preparing Kimchi is provided to secure high quality and sanitary safety using salty water obtained from deep sea water containing no contaminant. CONSTITUTION: A method for preparing Kimchi using salty water obtained from deep sea water comprises the following steps of: collecting deep sea water from the bottom of the sea; concentrating the deep sea water and obtaining salt from it; producing concentrated salty water from the deep sea water with 8~14°Be; trimming cabbages; removing foreign materials from them; putting the cabbages in a pickling tank; supplying the concentrated salty water into it until the cabbages are soaked completely; performing a magnetizing process; filtering them to remove suspended materials therefrom; salting the cabbages; adding a seasoning and additive to the salted cabbages and loading them in an electrostatic processing tube; applying 100-220V and 50~60Hz to the electrostatic processing tube and re-applying 1500-5000V and 10~150μA for 4-24 hours; and fermenting and aging the cabbages. |
