FIELD: food industry. ^ SUBSTANCE: invention relates to technology of manufacturing coffee substitutes. Method provides for thyme extraction with liquid nitrogen with separation of the corresponding miscella, chicory preparation, cutting, drying. Drying is performed in microwave oven till residual humidity about 20% at microwave filed power providing warming of raw material inside the bits till temperature 80-90C during at least an hour. Obtained mixture is impregnated by separated miscella performed with simultaneous pressure boost and depressurisation till atmosphere pressure with simultaneous freezing of mixture and its cryomilling in medium of evolved nitrogen. ^ EFFECT: method allows to produce flavoured drink according to nonwaste technology. |
