A method for making a puree-like product based on mushrooms provides for washing ceps, mincing, mixing with vegetables and flour, shortly fried in butter, and also pulping. The mushrooms are minced up to the middle size of particles of 0.1-0.5 mm, and heat treatment of the mixture obtained is carried out in the SHF field under conditions of vacuumizing at 50-60 kPa and a temperature 40-50 °С up to a content of dry matters of 12%. |
