摘要

PROBLEM TO BE SOLVED: To provide noodles and coating each having excellent palate feeling, taste and flavor of durum wheat flour by improving the product quality of durum wheat flour.

SOLUTION: Durum wheat flour is obtained by suppressing a damaged starch quantity to ≤9.5 mass%. A noodle wheat flour composition contains ≥5 mass% of the wheat flour. It is possible to obtain the noodles and coating which have excellent palate feeling, taste and flavor by using the durum wheat flour or the noodle wheat flour composition.
