<p><P>PROBLEM TO BE SOLVED: To provide a method by which an alcohol is produced while suppressing putrefying bacteria by using a solid raw material containing polysaccharides as a starting material. <P>SOLUTION: The method for producing the alcohol includes: (i) a step of adding polysaccharides-degrading enzyme, lactic acid bacteria, and alcohol fermenting bacteria to the solid raw material containing the polysaccharides; (ii) a step of blocking the solid raw material containing the polysaccharides after the step (i) from the outside air; and (iii) a step of simultaneously carrying out saccharification, lactic acid fermentation, and alcoholic fermentation of the solid raw material containing the polysaccharides under conditions blocked from the outside air. <P>COPYRIGHT: (C)2009,JPO&INPIT</p> |
