<P>PROBLEM TO BE SOLVED: To provide a method for producing frozen fermented soybeans by which frozen fermented soybeans packaged in small-sized packets in a frozen state can be practically produced as qualified fermented soybeans. <P>SOLUTION: The method for producing frozen fermented soybeans includes: longitudinally stacking a plurality of layers of steamed soybeans into which natto bacillus is inoculated, layer by layer via porous sheets; fermenting the stacked steamed soybeans; and maturing the fermented steamed soybeans followed by freezing the matured fermented soybeans. Frozen fermented soybeans frozen one by one are produced by putting apart the frozen soybeans produced by the method into granules each in a frozen state. <P>COPYRIGHT: (C)2009,JPO&INPIT |
