MINERAL-ENRICHED SOYBEAN PROTEIN SOLUTION

Disclosed is a mineral-enriched soybean protein drink such as a soy milk which can be prepared without using any troublesome step such as a pretreatment for preventing aggregation caused by the addition of a calcium compound and has a good taste. It is found out that when a soybean protein material in which the content of glycinine, i.e., one of the major components of soybean protein has been reduced is used as a starting material in the case of adding a calcium compound being highly reactive with soybean protein and highly water soluble, the starting material is stable to the addition of the calcium compound at a higher concentration than in using a commonly employed soybean material. It is also found out that the addition of a chelating agent allows the addition of the calcium compound at a still higher concentration. The above-described object has been achieved based on these findings.
