A method for preparing dried persimmons is provided to secure green tea components as well as saponin while maintaining the specific taste and flavor of the dried persimmons, thereby improving functionality. A method for preparing dried persimmons comprises the following steps of: adding 5-400g green tea leaves into 1L alcohol and extracting them at 60°C or lower to prepare a green tea extract liquid; adding 5-200g red ginsengs into 1L alcohol and extracting them at 60°C or lower to prepare a red ginseng extract liquid; mixing the green tea extract liquid and red ginseng extract liquid in a ratio of 3:7~7:3 to prepare a mixed liquid; dipping dried or semi-dried persimmons in the mixed liquid or spraying the mixed liquid to the persimmons and drying them; and injecting a red ginseng extract to the persimmons containing catechin and saponin.
