摘要 A method for producing edible malt powder is provided to show high milling yield from naked barley and waxy naked barley. A method for producing edible malt powder comprises the following steps of: dipping waxy naked barley in water to remove empty barley and foreign materials; soaking the impurity-removed waxy barley in water of 15°C for 24 hours until the moisture content becomes 45%; placing nonwoven fabric on a germination bed; laying the waxy barley on the nonwoven fabric to thickness of 3cm and covering it with another nonwoven fabric in order to prevent the evaporation of the moisture; maintaining the germination bed at 18°C for 72 hours and allowing young sprouts to grow 1-2mm in height so as to obtain malted barley; drying the malted barley in a grain drier; and obtaining unpolished barley from the dried malted barley using a barley milling machine and grinding the unpolished barley.
