RECOMBINANT SABINENE SYNTHASE AND USE THEREOF

PROBLEM TO BE SOLVED: To provide a new sabinene synthase by modifying γ-terpinene synthase which is a main enzyme in monoterpene synthetic pathway of citrus fruits such as Citrus unshu and its properties are well known.

SOLUTION: Disclosed is the sabinene synthase in which the three regions of amino acid sequence of plant-derived monoterpene synthase synthesizing γ-terpinene using geranyl pyrophosphate as a substrate are mutated. Also disclosed are a gene encoding the sabinene synthase, a vector including the gene and a transformant in which the recombinant vector is introduced. Sabinene can be produced industrially by acting the sabinene synthase on geranyl pyrophospate.
