Disclosed is an excellent saltiness-strengthening agent which can compensate for insufficient saltiness in the case of intending salt reduction. A saltiness-strengthening agent obtained by adding a dipeptide containing glutamic acid, more specifically speaking, Glu-Ala, Glu-Arg, Glu-Asn, Glu-Asp, Glu-Gln, Glu-Glu, Glu-Gly, Glu-His, Glu-Ile, Glu-Leu, Glu-Lys, Glu-Pro, Glu-Ser, Glu-Thr, Glu-Trp, Glu-Tyr, Glu-Val, Arg-Glu, Asn-Glu, Asp-Glu, Gln-Glu, His-Glu, Pro-Glu, Ser-Glu, Thr -Glu or Trp-Glu to the enzymatic decomposition product of a protein material and/or a basic amino acid, in particular, arginine; a method of producing the same; a method of strengthening saltiness by using the same; and a food or drink containing the saltiness-strengthening agent. |
