METHOD AND APPARATUS FOR MODIFYING WHEAT FLOUR OR WHEAT FLOUR DOUGH

PROBLEM TO BE SOLVED: To provide a method for producing modified wheat flour dough effectively utilizable as a processing raw material and an apparatus for the method.

SOLUTION: A mixture A containing wheat flour and water is charged into a single-tank electrochemical reactor containing an anode and a cathode in a non-separated state and electrified, and the obtained mixture is recovered from the whole reactor 1 and homogenized or the mixture is dried and pulverized. During the electrifying treatment, the temperature of the mixture containing wheat flour and water is maintained preferably at 5-30°C, and the electrification is carried out under a constant current condition of 10-70 mA.
