<P>PROBLEM TO BE SOLVED: To provide a method for producing a seasoning having deliciousness, full-bodied taste and fish flavor and slight in fishy smell, and to utilize fish-and-shellfish broth used for producing the seasoning without discarding it. <P>SOLUTION: The seasoning is obtained by mixing 5'-nucleotide-containing yeast extract, glutathione-containing yeast extract, vegetable extract and a monosaccharide into and dissolving them in fish-and-shellfish broth followed by heating; wherein it is preferable that the 5'-nucleotide-containing yeast extract contains 20 wt.% or more of 5'-nucleotide, and the glutathione-containing yeast extract contains 3 wt.% or more of glutathione. <P>COPYRIGHT: (C)2009,JPO&INPIT |
