摘要 <P>PROBLEM TO BE SOLVED: To solve such a problem that conventional wild rice gruel requires long time for cooking thereof, and requires long time for soaking the wild rice, so that rice cookers and other cooking devices are improper in cooking. <P>SOLUTION: The high temperature generated by friction of wild rice grains each other is efficiently used and thereby the wild rice is pressurized, expanded immobilized and simultaneously alfatized. Since the moisture content of the wild rice solidified via the above step is &le;15%, the wild rice easily absorbs moisture. After the solidified wild rice is roughly milled, the delicious wild rice gruel can be obtained within 10 sec by using hot-water or within 20 sec by using water or cold milk.
