Provided is a sulfone manufacturing method characterized by the fact that an allyl sulfone compound represented by formula (1): (1) (wherein A is CH2 or C=O, Ar is an aryl group that optionally has 1-3 substituents, and the wavy line represents that the steric relations around the double bond bound thereto are E-form, Z-form, or a mixture of E/Z) and an allyl halide compound represented by formula (2): (2) (wherein X represents a halogen atom, and the wavy lines represent the same meaning as above) are reacted in an organic solvent in the presence of an alkali metal hydroxide and a phase-to-phase transfer catalyst. The sulfone compound is represented by formula (3): (3) (wherein A, Ar, and the wavy lines represent the same meanings as above). Also provided is a method for manufacturing carotenoid from said sulfone compound.
