FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry. Preservation method is characterised by the fact that beetroot is packed in containers before filling at temperature of 97C, and put in microwave chamber during 170-180 sec. Repeatedly it is exposed to processing in microwaves then sealed and sterilised in autoclave. ^ EFFECT: invention allows to decrease sterilisation duration and enhance treatment uniformity, Increases quality of finished products.
