<P>PROBLEM TO BE SOLVED: To provide powdery dark-color soy sauce which is stuck to the surface of baked confectionery dough, potato chip dough or the like to be used in a rice confectionery business field, a snuck confectionery business field and the like, has no bitter taste and is suitable for soy sauce flavor seasoning. <P>SOLUTION: The powdery dark-color soy sauce is produced by: adding dark-color soy sauce obtained by adding sugar, organic acid, and inorganic acid or the salt thereof to soy sauce followed by heating the mixture, to another soy sauce; and drying the mixture to be pulverized so as to have ≥0.5 of an O.D. value of a 10 mm transparent and colorless cell at 470 nm in 1% (w/v) aqueous solution. <P>COPYRIGHT: (C)2009,JPO&INPIT |
