摘要 FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved paprika. Preservation method provides putting of pre-processed paprikas in jars; the jars are filled with hot water for 2-3 minutes with following exchanging of water for solution at 95-97C. After that product is processed in microwave field with frequency 2450 MHz during 90-100 seconds with following sealing and sterilisation in autoclave according to the mode. ^ EFFECT: invention allows to increase end products quality.
