<P>PROBLEM TO BE SOLVED: To provide powdery soybean milk having good water dispersibility, hard to cause coagulated substance such as insoluble powder lumps when mixed with water, and restorable into homogeneous soybean milk drinkable as it is; and to provide a method for making soybean milk powder, specifically as a method for producing the powdery soybean milk by which such powdery soybean milk stably representing the above-mentioned characteristics can be obtained using whole soybean milk produced particularly by a conventional production method. <P>SOLUTION: The method for producing powdery soybean milk comprises spraying soybean milk preferably whole soybean milk into a spray/dry chamber under the environment at a temperature of 47°C-<60°C, and a humidity of 74-80 %. The water content ratio of the powdery soybean milk discharged out of the spray/dry chamber is 12-20 %. Soybean milk restored from the powdery soybean milk has the same pH as that of powdered raw material soybean milk. The powdery soybean milk has a water content of 12-20 % and is homogeneously dispersive in water. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
