Claimed is a food recipe that is a substitute for animal and vegetable fats containing 10 to 95 % Wt. dry inulin, 2 to 50 % Wt. starch, and 1 to 45 % Wt. non-soluble nutritional fibre. The recipe further contains up to 3% Wt. glucose and water. The ratio of water to dry matter is in the range 1:2 to 1:3. Further claimed is a commensurate processed food that is partly or completely devoid of animal and/or vegetable fats. |
