<P>PROBLEM TO BE SOLVED: To provide a method for very easily and efficiently producing ume flesh extract without the need of grinding down ume fruits when producing the ume flesh extract. <P>SOLUTION: This method for producing the ume flesh extract comprises soaking ume in honey, and causing the honey to absorb fruit juice of the soaked ume using action of an osmotic pressure so as to obtain ume fruit juice-containing honey, heating the ume fruit juice-containing honey, and removing a prescribed amount of water from the ume fruit juice-containing honey, thereby obtaining the ume flesh extract. Alternatively, the method for producing the ume flesh extract comprises soaking ume in an aqueous solution in which sugar is dissolved, causing the aqueous solution to absorb fruit juice of the soaked ume using action of an osmotic pressure so as to obtain ume fruit juice-containing syrup, heating the ume fruit juice-containing syrup, and removing a prescribed amount of water from the ume fruit juice-containing syrup, thereby obtaining the ume flesh extract. <P>COPYRIGHT: (C)2009,JPO&INPIT |
