<P>PROBLEM TO BE SOLVED: To provide a carotenoid pigment-containing emulsion composition which has high emulsion stability of the carotenoid pigment-containing emulsion composition itself and can be used as a stable colorant even when added to foods having high acidity and high salt concentration. <P>SOLUTION: The carotenoid pigment-containing emulsion composition is prepared by emulsifying the carotenoid pigment using a polysolvate-containing oil phase and a water phase. <P>COPYRIGHT: (C)2009,JPO&INPIT |
