PROCESS FOR PREPARING YEAST EXTRACTS HAVING WHITENING AND WRINKLE-REPAIRING ACTIVITY AND COMPOSITION CONTAINING THE SAME

A method for manufacturing a yeast extract having whitening and anti-wrinkle activity is provided to perform the autodigestion process of Saccharomyces sp. and prevent deactivation by residual ethanol and salt. A method for producing yeast extract having whitening and anti-wrinkle activity comprises: a step of culturing the Saccharomyces sp. yeast at 25-35‹C; a step of additionally culturing at 40-70‹C to induce autodigestion of yeast; and a step of isolating the autodigested product of yeast from the culture medium. The Saccharomyces sp. yeast is Sacchromyces cerevisiae, Sacchromyces carlsbergenesis, or Saccharomyces bayanus.
