A transcritical process for increasing yield in the extraction of natural active agents (A) from vegetable substrates using supercritical fluid (I) (optionally together with a cosolvent) involves subjecting the extraction system to rapid, cyclic pressure variations around the critical pressure of (I) in a thermostated, hermetically sealed vessel, by varying the volume of the vessel while retaining a constant quantity of (I).
