A low salted-soybean paste using onion and five grains, and the preparation method thereof are provided to make quick ripening and to prevent degeneration among the fermentation and storage. A low salted-soybean paste using onion and five grains soy-bean koji 63 weight% through 53, steamed mixed grain 30 weight% through 20, salt 8 weight% through 10, onion powder 2 weight% through 3, and water. The mixed cereals include rice, barley, and millet. Salted koji is manufactured by mixing koji 63 weight% through 53 with salt 10 weight% through 8. The salted koji is mixed with the mixed cereals and onion powder. The mixture sealed is aged at 30‹C through 25 for 1-2 month.
