摘要 A method for producing yeast which has starch degrading ability and alcohol fermenting ability is provided to have yeast fusion having excellent alcohol productivity through protoplast fusion method. A yeast fusion having starch degrading ability and alcohol fermenting ability is Saccaromyces sp. FA776 KCCM 10926P. A method for producing the yeast comprises: a step of selecting excellent parent strains having starch degrading ability and alcohol fermenting ability; a step of adding the parent strain in a buffer to form protoplast; and a step of fusing the protoplast. A parent strain having excellent starch degrading ability is Saccharomyces diastaticus KCTC 1804. The parent strain having excellent alcohol fermenting ability is Saccharomyces cerevisiae KOY-1.
