A method of extracting protein-polysaccharides using a high pressure hot water extraction technology and a method of producing mushroom processing food are provided to prevent a deterioration of bioactive substance and nutritive elements by the heat, and increase the extracting efficiency and bioactive substance. One of mushroom sample among edibility and medicinal use raw mushroom or dry mushroom and a pouch accommodating water are provided(P11). The pouch is processed as a condition of the pressure range 100MPa to 600 MPa(P15). The mushroom sample processed with high pressure is hot-water processed to extract the protein-polysaccharides(P16). The high pressure processing lasts for thirty seconds or three hours. The high pressure processing is at 1 or 60 celsius. The hot water extraction performed at 50 or 80 celsius. The mushroom sample is selected among coriolus versicolor, a Polyporus umbellatus, a shiitake mushroom, a agaricus mushroom, a ganoderma lucidum or a phellinus yucatensis. The mushroom extract is concentrated to produce the concentration of the mushroom, and mixed concentration if produced by mixing with one of the concentration of herbal medicine, platycodon grandiflorum or plum. A sugar solution and mixing concentration are mixed in hot water to produce a mushroom processed food product.
