<P>PROBLEM TO BE SOLVED: To provide a frozen-food brine composition the freezing temperature of which does not rise even when the ethanol concentration is low and thereby which is prevented from causing tissue breakdown by the growth of ice crystal generated from the water in the tissues (cells) of the food, and to provide a method for producing frozen food. <P>SOLUTION: The frozen-food brine composition contains 30-70 wt.% of ethyl alcohol, 0.5-10.0 wt.% of erythritol, and water. It is preferable that the concentration of the ethyl alcohol is 35-60 wt.%, the concentration of the erythritol is 0.8-5.0 wt.%, and the remainder comprises water. <P>COPYRIGHT: (C)2009,JPO&INPIT |
