<P>PROBLEM TO BE SOLVED: To provide a method for producing low vitamin K-content Natto having no risk of inhibiting the anticoagulant action of medicines, which comprises strictly controlling the amount of menaquinone in produced Natto so as to optionally regulate the amount of the menaquinone contained in the Natto. <P>SOLUTION: The method for producing low vitamin K-content Natto comprises: the first process of selecting low vitamin K-producing bacillus Natto; the second process of adding the low vitamin K-producing bacillus Natto to soybean powder to ferment the soybean powder followed by qualitatively detecting the amount of the menaquinone contained in the soybean powder; and a third process of admixing the prescribed amount of the soybean powder produced in the second process to steamed Natto soybean. The amount of the menaquinone produced in the third process can be set to have a desired value because the amount of the menaquinone is made qualitative in the second process while the menaquinone is produced by the low vitamin K-producing bacillus Natto, so as to produce Natto not inhibiting the anticoagulant action of medicines. <P>COPYRIGHT: (C)2009,JPO&INPIT |
