PROBLEM TO BE SOLVED: To provide a production method in a freezing or freeze-drying process of a microorganism biomass by which the damage or extinction of the biomass is prevented and which provides a high survival rate. SOLUTION: The method for producing the frozen or freeze-dried biomass, providing the high survival rate uses a permeating liquid obtained by subjecting milk or whey to an ultrafiltration (UF) membrane treatment as the protective agent at the freezing or freeze-drying.
