<P>PROBLEM TO BE SOLVED: To provide oil-and-fat processed food having favorable taste, hardly losing shape even by heat, rich in extensibility, chewing property and stickiness, and having a low moisture of ≤5 wt.%. <P>SOLUTION: The oil-and-fat processed food has oil and fat, saccharide and hyaluronic acid as essential constituent, wherein the hyaluronic acid is dissolved in water and/or non-water solvent and contains ≤5 wt.% of the moisture and/or ≤20 wt.% of the non-water solvent. The food preferably contains 0.02-5 wt.% of the hyaluronic acid. The oil-and-fat processed food is produced by dissolving the hyaluronic acid in the water and/or the non-water solvent to be admixed with the oil-and-fat. <P>COPYRIGHT: (C)2009,JPO&INPIT |
