A processed ginseng or processed ginseng extract is provided to remarkably increase the content of Rg2, Rg3, and Rb1 in ginsenoside. A processed ginseng or processed ginseng extract having increased ginsenoside content by hydrolysis is produced using ginseng with enzyme. The enzyme is beta-glucanase, pectinase, hemicellulase, cellulase, arabinase, or xylanase. The ginseng is a red ginseng. The ginsenoside is Rb1, Rg2, and Rg3.
