<P>PROBLEM TO BE SOLVED: To provide sago fluidity starch and to provide a method for gelling the same. <P>SOLUTION: Provided is the sago fluidity starch, a composition comprising the starch, and the method for producing a gel comprising the starch. Such fluidity starch exhibits exceptionally fast gelling properties, high gel strengths, and exceptional elasticity. The properties allow for a significantly reduced hold processing time when producing the gelled product and a gel strength integrity or texture of the final product can be maintained by a smaller amount of starch used. <P>COPYRIGHT: (C)2009,JPO&INPIT |
