The ethanol extraction method comprises dry grinding a biomass in a wet malt mill (1), mashing, fermenting and then distillating the biomass. A purification is carried out by rectification or absolution by which an ethanol purity of 98 vol.% is obtained. The distillation is carried out after the fermentation. The mashing, fermenting and/or distillation are carried out in the fermentation container. The method is carried out in a brewing plant.
