An apparatus for the preservation of still beverages is disclosed. The apparatus includes a vacuum tank (18) capable of maintaining a standing vacuum. The apparatus also includes a vacuum pump (16) connected to the vacu um tank (18). The vacuum pump (16) reduces the pressure in the vacuum tank (18) to create the vacuum. A vacuum line (30) is connected to the vacuum tank (18 ), and at least one valve head (22) is connected to the vacuum line (30) for receiving a bottle (1) having a stopper (45) placed therein. The valve head (22) exposes the bottle (1) and stopper (45) to a vacuum. Upon exposure to t he vacuum, air in the bottle (1) is substantially evacuated and is prevented fr om reentering the bottle (1) by the stopper (45).
